    Years ago I tried to cook one. It did not work out as planned. It didn't taste bad but it was tough as wang leather. Got a recipe I can try?

    All rodentia are tough as bulls balls. You need to cook it right or you have to have alligator teeth and bulldog jaws to chew it. I do it like rabbit: braise it with a little bacon in the crock pot, low heat, 4 hours or so, bone in. Serve with caramelized onions and garlic, a few capers and just a few thyme leaves. make sure you pull any glands off the meat. They'll look like little lumps of fat.

    Thanks. I think I will pressure cook it until done and tender. Or, in the crock pot if I can be patient.

    Where in Ms did you find those hogs? My buddy and I came across one outside Ecru (about 15 miles from Tupelo) during late deer season and it simultaneously scared the hell outta me and amped me up (first hog encounter) . I didn't take a shot at it because excuses...anyway, I have a new rifle now and I have that piggy's number next time I go out there.
